You've probably caramelized sugar in a pan and watched it slowly turn amber and bubble. You might have wondered — could this catch fire? The answer is more complicated than most people expect.
Sugar is combustible but not easily flammable in its solid form. A pile of granulated sugar won't ignite from a spark or an open flame under normal conditions. However, sugar can burn at high temperatures, and when dispersed as a fine dust in the air, it becomes genuinely explosive — the same principle behind grain elevator explosions and industrial food processing hazards.
At What Temperature Does Sugar Burn?
Granulated sugar starts to melt at around 320°F (160°C) and begins to caramelize between 320–375°F (160–190°C). It can ignite if exposed to a flame at high temperatures — typically around 350°F (177°C) under direct flame. But it's not the kind of thing that bursts into flame the way alcohol or gasoline would.
The more relevant fire risk is powdered sugar or ultrafine sugar in industrial settings. Fine sugar particles suspended in air create a dust cloud that can explode at a concentration of about 35 grams per cubic meter — well within the range achievable in a bakery or sugar processing facility.
Can Sugar Explode?
In industrial environments, yes. Sugar dust explosions have caused fatal accidents in food processing plants. The five elements needed for a dust explosion — fuel, oxygen, dispersion, ignition, and confinement — are all present when large amounts of fine sugar are handled in enclosed equipment. OSHA classifies sugar as a combustible dust hazard.
In a home kitchen? The risk is extremely low. You'd need a dense cloud of powdered sugar in an enclosed space with an ignition source — a scenario that doesn't naturally occur when you're baking cookies.
Safe Handling in the Kitchen
Keep sugar containers away from stove burners. Don't attempt to melt sugar directly over a very high flame — it can reach its ignition point faster than you realize and flame up suddenly. If you're making candy or caramel and the sugar ignites, cover the pan with a lid to smother the flame and call it done. Don't add water to burning sugar — it can cause a violent steam reaction.
